The Manioc flour bread
As you know, I decided to test Cassava flour by preferring it to wheat in most recipes I know. Since the beginning of my experiences with this flour, I realized that it was not compatible with recipes that require a real lift. The cassava flour bread that I am presenting today is actually the result of my 3e attempt. the first 2 was inconclusive (the 1ere contained 100% Cassava flour and the other 50%) and the 2 gave a friable bread. I chose the formula on poolish to achieve this one.
